Lunches like these remind me that simple things can taste good too, and I don’t always need a ton of ingredients. I made paninis out of this classic combo, because I don’t think cold mozzarella tastes like anything. I added balsamic vinegar to the tomatoes, and seasoned the tomatoes and cheese. I used a tiny bit of olive oil on the skillet and rubbed some garlic on the toasted sides. My bread was an Italian bread from the store.
The only problem was the quality of the tomatoes. I got some off of the vine at Kroger, and they were just ok. With such a simple sandwich, you really need the best ingredients.
