Paella

season chicken – oregano, paprika

saute in oil

slice, cook chorizo also

1 big onion diced, 4 cloves garlic, 1 mini bottle white wine, cook down

2 cups arborio rice (try short to see if it’s less sticky) wine or rice first?

stir 2 minutes to toast

4 cups chicken stock/broth + safrron (1 tbsp) + lemon zest (1)

stir and cover 15 minutes ish medium or med low, s&p

almost done, add chicken, sausage, clams, shrimp cover and cook 3-5 minutes, roasted red bell pepper

garnish tomatoes and chopped green onions, lemon wedge

next time just shrimp (big with tails on) and chorizo slices, add crushed red

guy chicken and seafood, all recipes paella 1 and easy paella
