Greek meatballs

I took Mom’s recipe and changed it up a little. I forgot to roll the first few meatballs in flour, so they didn’t maintain a nice shape when flipping in the oil. These meatballs are pretty soft, which results in a melt in your mouth meatball. These were the quantities I used. I made the mix a day ahead, then shaped and rolled in flour before frying. I thought about making a tzatziki sauce but a squeeze of lemon worked really well! The sauce isn’t necessary, unless I’m making something else that needs it!

  • 10.5 oz ground beef
  • 1/2 cup pesto breadcrumbs
  • 1/4 cup milk (enough to moisten breadcrumbs)
  • 2 tbsp red wine vinegar
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp dried mint
  • 1 tsp dried Greek oregano
  • 1/2 tbsp salt
  • 1/2 tsp pepper
  • Flour
  • Oil (this is not a very shallow fry, otherwise the meatballs will get mad and spit up at you!)
  • Lemon wedges
