I got a request for dark chocolate cake and white frosting for a relative’s birthday. Since I knew he likes Amaretto, I wanted to incorporate that into the dessert. So, I made a chocolate cake topped with a white chocolate mousse, with a side of amaretto ice cream and garnished with chopped toasted almonds. Perfect! I over whipped the white chocolate mousse (aka white chocolate whipped cream,) but no one seemed to care.

I made a small batch with 2 egg yolks. I think I used 3/4 cup of milk and 3/4 cup of cream, but it could have been one cup each too. I wanted to buy amaretti cookies but I figured I had done enough already.
