Apple brie soup

This soup should be called apple brie roasted garlic chicken soup, buuuut that’s a little excessive. It was a great soup though! It made 2 big servings (or one medium and one HUGE for Jacob.) If I had been home, it could have been three. But this soup is great for lunches, so bigger quantities need to be made!

Here are my ingredients/quantities:

  • 2 tbsp butter
  • 1/2 medium onion, small diced
  • 1 stalk celery, small diced
  • 1 carrot, small diced
  • 1 head roasted garlic, skin removed
  • Splash white wine
  • 2 tbsp flour
  • 3 cups chicken stock
  • 6 oz brie cheese
  • Splash heavy cream, if desired
  • 2 springs fresh thyme, leaves removed and minced
  • 2 cooked chicken thighs, diced (rotisserie style)
  • Salt and pepper, at every stage of cooking

I made the soup one day ahead, and only added the chicken at the end (or on the next day, if eating at home.)
