Jacob requested limoncello cupcakes for his birthday, and I asked if he wanted the exact same thing or if he wanted me to change it up a little. He voted to change it up. (He might have been humoring me because he knew that’s what I would want.) I choose a coconut cake from Sky High. It had a fluffy, bouncy texture and rose a lot. I made 1/2 the recipe in an 8×8. I didn’t love love the taste, to be honest. I’m not sure if it was the coconut milk or too much baking powder. Or it could be something else, I’m not sure. I made the lemon curd and frosting from the original recipe. I did add a few tbsp of butter to the curd. It was still a pretty aggressive flavor. It worked great in combo with the cake and frosting.
